Something New With Red Fermentation Rice
This is my first time trying something new, I have never even used this ingredient in my cooking before. It started from my curiosity about one of my favorite dishes in one of the big restaurants around where I live. A restaurant that sells Chinese cuisine and is the most famous. Of course, even though it is very famous, the food is very delicious and has an authentic taste.
My habit of liking food like dim sum and Chinese food makes me very curious about what ingredients they use, how to cook it and special tricks in cooking. Things like that make me really like cooking. That curiosity always arises because I fall in love.
Every time I eat at that restaurant, I always order red chicken feet. You can search on the internet with the keyword 'Angsio Chicken Feet'. The picture looks scary but the taste is really worth cooking. But I realized that it is not easy to like the taste of chicken feet.
I just realized one thing that apparently the food is not as simple as I thought. Not from how it is made but the ingredients used. Angsio comes from an unusual type of ingredient, but rather a cooking technique to make food red.
One of the things I do to make the color of these chicken feet turn red is the use of red yeast rice. Red yeast rice is fermented red rice that can make the color red naturally. There are many benefits in using red yeast rice, including as a blood-boosting nutrient. Natural color is sometimes a form of the characteristics of the food. For example, like dragon fruit which is indeed very good for smoothing blood in the human body.
Ingredients:
- 500 gr of chicken feet that have been cleaned and the nails removed
- ½ tsp red yeast rice
- 10 cloves of red chili, 5 cloves of shallots and 4 cloves of garlic
- 3 cloves of candlenut, 1 lemongrass leaf and galangal
- 1 tbsp oyster sauce, white pepper, salt and sugar
- Water and vegetable oil
How to cook:
- Chicken feet that have been cleaned must of course be boiled first. Boiling chicken feet takes quite a long time, to have a soft texture, it can be boiled for 45 minutes or even 1 hour, or it can also be pressure cooked. I chose to boil it.
- After it is finished boiling, let it stand until the water becomes colder. While waiting, prepare the ingredients to be blended. Puree the chilies, onions, candlenuts, and red yeast rice. It takes quite a long time because red yeast rice is relatively difficult to blend. Once finished, set aside.
- Heat a frying pan with a little oil, then saute with the ground spices. After the aroma is slightly fragrant, add the chicken feet without the boiling water. Then diffuse 100ml of water.
- Add lemongrass and galangal to make it more aromatic. Then add seasoning to add flavor, salt, sugar, pepper and 1 tbsp oyster sauce.
- Once finished, remove and set aside.

Here in Italy usually people don't eat chicken legs are considered something uneatable but I see here many recipes of chicken legs like yours and seems really something super yummy I must try
