Exquisite Stuffed Sweet Potatoes. / Exquisitas Batatas Rellenas.

Yesterday I was doing some vegetable shopping and one of the things I went looking for were some Sweet Potatoes, lately I have been using it frequently as it has a high nutritional value, plus it has helped me to lower a little the consumption of white rice that was really not doing good to my health.

I had these sweet potatoes ready to prepare a sweet but sometimes plans do not go as expected and I had to change my recipe from sweet to salty, if I had known this I assure you that I would have bought another type of sweet potato and with another shape, but well I'm not complaining because in the end the dish I was able to prepare was delicious and very nutritious.





Here is my recipe, but please join me.

Ingredients:

  • 2 Baked Sweet Potatoes, size of your preference.
  • Half an avocado.
  • Half a Red Onion.
  • 1 cup of cooked Chickpeas that are very tender.
  • Juice of half a lemon.
  • Vegetable cream, I used Cashew or Merey, this is optional.
  • Salt and Pepper to taste.


Preparation Method:

I am going to start by sharing with you how I have prepared the Cashew Cream.

The first thing we do is to soak 100 grams of cashew nuts with hot water and let them soak for 2 to 4 hours, this will help them hydrate and it will be easier to process them.

After this time, remove the water and put them in the blender together with the garlic and the juice of half a lemon.

Add a teaspoon of salt, 100 ml of water and don't forget to add more flavor with a few sprigs of cilantro.

Blend it very well, letting all the ingredients unite and form a rich cream, if you like, add black pepper and set it aside.

Now let's go to the preparation of our sweet potatoes.

We take our sweet potatoes previously washed very well if possible with a brush to wash vegetables, then we remove the ugly parts that may have in the shell and with a fork we open some holes, well I do them because I've heard that they cook better.

Place them in a baking pan and add olive oil or any other vegetable oil and season with a little salt, put them in the oven for about 1 hour to an hour and a half, it will depend on your oven, they will be ready when you put a fork in and it goes easily into the sweet potato.

Once the sweet potatoes are cooked, we will try to open a groove in them, we do it with a knife, and with a fork we flatten a little the inside part in such a way that it becomes like a basket, because there we will put our stuffing.

Now we are going to take the chickpeas, put them in a plate or in a bowl and we are going to crush them with a fork as if we were going to make a puree.

Then add the avocado and mash it with a fork.

Chop the half red onion and add it to the preparation, mix.

Now add the juice of half a lemon and salt.

A splash of Extra Virgin Olive Oil preferably, if not use the one you have, at this point you can add Black Pepper if you wish, mix well and we have ready the filling for our sweet potatoes.

We are going to take our Sweet Potatoes and with much affection we begin to fill, this is nothing complicated we do it with a fork or spoon.

Once our sweet potatoes are stuffed we put the vegetable cream on top, I used cashew nuts this time but you can use any vegetable mayonnaise you prefer.

Now I have today's lunch ready, it is very complete, nutritious and delicious! The big sweet potato is for my husband and the smaller one is for me, a satiating dish!

Ayer estuve haciendo unas compras de verduras y una de las cosas que fui buscando fueron unas Batatas o Boniato, últimamente la he estado usando frecuentemente ya que tiene un alto valor nutricional, además me ha ayudado a bajar un poco el consumo de arroz blanco que verdaderamente no le estaba haciendo bien a mi salud.

Estas batatas las tenía listas para preparar un dulce pero a veces los planes no salen como uno espera y tuve que cambiar mi receta de dulce a salada, si hubiera sabido esto les aseguro que hubiera comprado otro tipo de Boniato y con otra forma, pero bueno no me quejo porque al final el plato que pude preparar quedo delicioso y muy nutritivo.





Aquí les dejo mi receta pero por favor acompáñame.

Ingredientes:

  • 2 Batatas o Boniatos cocidos al horno, del tamaño de tu preferencia.
  • Medio Aguacate.
  • Media Cebolla Morada.
  • 1 Taza de Garbanzos cocidos que queden bien tiernos.
  • El Jugo de medio Limón.
  • Crema vegetal, yo usé de Anacardos o Merey, esto es opcional.
  • Sal y Pimienta al gusto.


Modo de Preparación:

Voy a comenzar por compartirles como he preparado la Crema de Anacardos.

Lo primero que hacemos es poner a remojar 100 gramos de Anacardos con Agua caliente deben quedar bien cubiertos y dejamos remojando de 2 a 4 horas, eso ayudará a que se hidraten y será más fácil procesarlos.

Pasado el tiempo, le sacamos el agua y echamos en la licuadora junto con el Ajo y el jugo de medio Limón.

Añadimos una cucharadita de Sal, 100 ml de Agua y no se nos olvide agregar más sabor con unas ramitas de Cilantro.

Eso lo licuamos muy bien dejando que todos sus ingredientes se unan y formen una rica crema, si es tu gusto agrega Pimienta negra, la reservamos.

Ahora vamos con la Preparación de nuestras Batatas o Boniato.

Tomamos nuestras Batatas previamente muy bien lavadas si es posible con un cepillo para lavar verduras, luego le quitamos las partes feas que pueda tener en la concha y con un tenedor le abrimos unos agujeros, bueno yo se los hago porque he escuchado que así se cocinan mejor.

Las colocamos en un molde para horno y le añadimos Aceite de Oliva o cualquier otro Aceite vegetal y le aderezamos con un poco de Sal, metemos al horno por aproximadamente 1 hora a hora y media, eso va a depender de tu horno, estarán listas cuando le metas un tenedor y entre con facilidad en la Batata.

Bueno al estar cocidas las Batatas vamos a tratar de abrirles una ranura, eso lo hacemos con un cuchillo, y con un tenedor aplastamos un poco la parte de adentro de tal forma que se haga como una cesta, pues allí pondremos nuestro relleno.

Ahora vamos a tomar los garbanzos los echamos en un plato o en un bol y los vamos a aplastar con un tenedor como si fuésemos a hacer un puré.

Luego Agregamos el Aguacate y también lo aplastamos con el tenedor.

Picamos la media Cebolla Morada y lo añadimos a la preparación, mezclamos.

Ahora le añadimos le Zumo de Medio Limón y la Sal.

Un Chorrito de Aceite de Oliva Extra Virgen preferiblemente, si no usa el que tengas, en este momento puedes añadir Pimenta Negra si así lo deseas, mezclamos muy bien y ya tenemos listo el relleno para nuestras Batatas.

Vamos a tomar nuestras Batatas y con mucho cariño empezamos a rellenar, esto no es nada complicado lo hacemos con un tenedor o cuchara.

Una vez rellenas nuestras Batatas le colocamos por encima la Crema vegetal, yo usé esta vez de Anacardos pero puedes Usar cualquier mayonesa vegetal que prefieras.

Ahora ya tengo el almuerzo de hoy listo, es muy completo, nutritivo y delicioso! la Batata grande es para mi esposo y la más chica pues para mí, un plato saciador!
