3, 2, 1....FOOD IS READY!

When I'm burnt out and starving after a long day's work, going in the kitchen to make something would not come easily to me. I'd rather just have fruits or cereals, cause as we know, they're the quickest I can get in that time to keep my stomach from rumbling and my movements steady.

Takeouts wouldn't be such a bad idea even. Because stating the obvious, I'm badly famished and all I'd love to do would be eat and get some deserving rest.

Oh, I forgot, I don't fancy takeouts very much. So walk with me to the kitchen, please. Before I begin, I hope you know there are no quick fixes anymore? Well, there's noodles which is supposedly the easiest meal to prepare but, the cost of it has tripled over the past weeks. And even when you want to have them, they're not very filling and in so little time, you feel hunger again. Thankfully, I'm not a fan of noodles.

I'd really have loved to approach this from the angle of a meal I'd love best to have but since it's about quick-fixes, the next readily available staple would be Rice. Its like the most basic meal in every average home.The ingredients for this meal are easily found in every kitchen and depending on how you choose to make yours, it's all just that speedy and nutritious.

Jollof rice it will be for me. Going by what I always have at home, the ingredients thereof will be;

Rice
Groundnut oil
Crayfish
Dry fish
Carrots
Green pea
Puree tomato
Onion
Salt
Fresh Pepper
Seasoning cubes

That's about everything for the ingredients. So, this is supposed to be a quick meal and in about thirty minutes, more or less, it should be ready.
Let's begin.

Put some cups of water in the cooking pot and on fire.
Wash the rice and put in the pot.
Let it parboil for about 8-10minutes.
Drain the water from the rice using a sieve and let that sit.
Now rinse the pot and set it back on fire.

Once it's dried completely of water, add some quantity of your oil.
Let it heat up only mildly, then add your chopped onions and sauté for a minute.
Next, add the puree tomato and stir. Stir until the tomato doesn't taste so sour.
Add some pepper and Seasoning and some cups of water, enough to cook the rice.
At this point, add the deboned dry dish, Crayfish, Seasoning and salt.
Stir and bring to a boil.

Next you add in the parboiled rice and stir to combine.
Taste and add some more Seasoning if need be.
Cover the pot and allow to cook.
When once the rice is done and almost dried of the stock, add the washed and chopped veggies and stir.
And viola, food is ready!

This is easy-peasy meal for me.
Ingredients are readily available and it no time, I'm sitting over a plate of delicious, hot rice.
And that's it.
