Cardamoms! the most important spice in Indian cuisine after chili

Hello, community and vegan food lovers! Greetings! Recently, we had a sudden snowfall, and the temperature dropped to -7°C. The snow turned into ice, making everywhere slippery. I had to be very careful on my way to work, using spiked soles under my shoes. no markets no shopping options I ran out of bread but didn't want to go to the bakery or store. I had some bananas at home, and my pantry is always stocked with different flours. So, I got the idea to make banana bread with cardamom, especially since @qurator recently announced the theme of cardamom for the Hive Top Chef cooking contest.

Cardamom is not a main ingredient it is a spice that in Indian cuisine is commonly used both in desserts and masalas (spice blends) for savory dishes.
It has many health benefits. You can find info about that on the internet.

My spice box is filled with the spices that are my cooking secret. I keep one cup of each main type, including of course, whole cardamoms. To use cardamom, peel away the pods and extract the black seeds. Sometimes the seeds can be white, brown or green which indicates they were picked before the pod ripened and will have less flavor. The powdered spices available many places inevitably lack the taste and aroma of freshly ground whole spices.

Here are the ingredients for my banana buns:
2 bananas
2 cups of white flour
1 cup of whole-meal flour
2 tbsp dry fruits
1 tsp baking powder
6 cardamom pods
2 tbsp oil
1 tbsp sugar
1 tsp dried yeast
1 tsp salt

Dissolve the sugar in the lukewarm water.

Stir the yeast into the water and keep aside until bubbles start to form.

freshly ground cardamom powder. I prefer to grind them by hand in a stone mortar and pestle

the coarsely ground cardamom powder goes in with the flour; mix all the dry ingredients well.

blended into a puree in the mixer.

when bubbles form on the yeast pour it over the dry ingredients.

then add the banana puree.

rinse the mixer jar with 1/2 cup of water

and pour it into the mix

Mix everything together to make a dough.

knead the dough lightly. you may find that using your hand is best for this.

The dough should be sticky; pour a little oil on it and spread it over the surface.

The dough is ready, keep it in a warm place for around 2-3 hours. in the cold season i usually put it in the oven and turn on the light.

After 2 and a half hours it rose up to double size.

Take sufficient dough portions to make balls and place them on a baking tray

Cover and keep them aside for around 1/2 an hour.

After 1/2 an hour, bake them in a preheated oven at 180 C for about 40 minutes

When done let them cool on a wire rack.
you can enjot them as normal buns they are only slightly sweet.

I cut a few in halves and put banana slices on it.

and drizzled a little maple syrup over them.

For me, cardamom has a sweet aroma that makes it special. Cinnamon also has a sweet taste; it depends on what you like. I grew up with cardamom, and we used it more than cinnamon. I love to use cardamom in most of my desserts or sweet foods as well as savory. You will find out the difference. Greetings Have anice weekend :)
