Meatloaf warm dinner for foggy and cold day
Hello, friends, food lovers, and community members! I am back in my northern home.
After feeling worn out from the heat, house construction, and the unpredictability of daily life, we returned to cool down both our bodies and minds. When we first arrived, we enjoyed two beautiful days of warm weather, but I spent most of that time resting.
Today, Sunday, I wanted to go out, but there was heavy fog and a drop in temperature. I decided it would be better to stay home and prepare a nice dinner. For the past three weeks, we have been following a vegetarian diet in India. for this cold weather, I wanted to make some warm food. for this week, @qurator announced a Top Hive Chef contest with the theme of meatloaf, so I decided to enter my dish for the contest. So, this is my entry for the contest for top hive chef by @qurator.
I used small bites of chicken filet instead of minced meat, and it turned out to be a very tasty meatloaf.
Ingredients:
400 grams of small package of chicken bites
2 eggs
2 carrots
1/2 cup coriander
2 red onion
1 red paprika
1/4 cup bread crumbs
2 tbsp potato starch
1 tsp oil
1 slice of bread
spices:
1 tbsp ginger garlic paste
1 tsp paprika powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp spice mix
1 tsp salt
Finely chopped onion, paprika, carrots, and coriander.
In a bowl, placed the meat
Added chopped vegetables. I used chopper after long time, it was became very fine specially paprika.
Added all spices
Bread crumbs
Potato starch
two eggs.
when I mixed it, I felt it had more moisture.
I ground 1 bread slice and added it to the mixture.
Greased a baking tray using 1 tsp oil.
Put the mixture into the baking tray.
Set for baking at 180 C for around 40/45 minutes.
After 45 minutes, this is the result.
Made tzaziki using cucumber, turkish yogurt, pepper and salt, with chives and garlic.
Grated the cucumbers and drained the extra water from them.added chopped chives and garlic to it.

Added yogurt and mixed it thoroughly.
To make a sauce used
2 tbsp tomato paste
1 tsp vinegar
1 clove of garlic
1 tsp sugar
1 pinch of salt
1 almond-sized turmerind
1 tbsp mushroom sauce.
1 tsp potato starch
Poured vinegar in a bowl
Added tomato paste.
Added mushroom sauce.
Salt and sugar are mixed well and set aside.
In a small pan, put 1 tsp butter and added chopped garlic.
Added potato starch and roasted it well until released aroma.
Poured the mixture of vinegar, tomato paste, and mushroom sauce and cooked for 2-3 minutes.
Here, the loaf is also ready.
I poured the mixture/sauce on top of the loaf.
served with mashed potatoes, tzaziki, and cherry tomatoes.
