Sprouted beans full dinner
Hello. friends and community greetings.
Horse gram called Macrotyloma uniflorum has been around since the early ages – as early as 2000 BC! It was grown in Africa and Asia. Commonly it is known as kulith, hurdle, or Madras beans this is a poor people's superfood.
It is known as a miracle superfood. A traditional elixir for ailments like diabetes, heart disease, kidney stones, asthma, obesity, cold, and many more, horse gram is highly protein-rich, high in calcium, low in fat, and full of antioxidants.
Today I use these sprouted beans to make my full dinner for @qurator hive's top chef.
How to sprout them?
Wash thoroughly these beans two or three times. they contain some sand particles. After washed soak it for around 6-7 hours preferably overnight. After draining the water using a strainer tie them in a cheesecloth and keep them in a warm place for 24 hours. I put them in a tight container.
Here in Norway, the cold climate takes more than 1 day now it is summer, sprouts show up after 30 hours. From 1 cup of beans, I got 2 and 1/2 cups of sprouted beans and 3 cups of stock. I used them in full dinner.
First I cooked them (saving 1/2 cup sprout for salad) with 1 tsp salt and 1/2 tsp turmeric with 4 cups of water in a pressure cooker for 3 blasts.
Using a strainer I separated beans from the stock using both.
this portion is for making bean rice.
Making curry
Ingredients:
2 tomatoes
1 tsp garam masala
2 cm fresh ginger
1 tsp jaggery
1/2 cup desiccated dried coconut
1 tsp tamarind
3 sprigs of coriander.
1 cup bean stock
3/4 cup beans
salt to taste
2 pinches of hing (asafoetida).
1 tsp red chili powder.
2 tsp oil
In a pan, after heating 1 tsp oil put coconut for roasting add ginger pieces, and chopped tomatoes continuously stirring.
Add coriander, garam masala, tamarind, jaggery, and sauté for 2 minutes. Removed from heat and kept to cool
After the mixture cools down grind it in the mixer into a smooth paste
Pour the ground mixture and 1 cup water into the beans and cook until boiling point.
In a saucepan heat 1 tsp oil.
Add 2 pinches of hing.
1 tsp salt and red chili powder.
when it becomes aromatic/smoky pour the cooked beans mixture into it and cook for 2 more minutes.

The curry is ready
Rice with sprouted beans
ingredients:
1 cup basmati rice
1 tomato
1-star anis
2 cardamom
2 cm cinnamon
1 tsp garam masala
1 cup bean stock
1 1/4 cooked sprouted beans
2 red chilies
1 tsp Urad dal split black beans
1/2 tsp cumin seeds
2 pinches of hing
1 tbsp oil
1 slice of lime.
In a pan heat oil.
Add spices in, pieces of red dried chilies cumin, hing, urad dal
cardamoms, cinnamon, and star anise sauté for 30 seconds
Add washed rice and stir it for 2 minutes
Add 1 cup of beans. mix it with rice, add garam masala, and chopped tomato. stir it for 2 minutes.
Add beans stock—additional 1 cup water, lime juice salt if required
coriander stir well and cook for about 10 minutes on medium heat.
Spread 1/4 cup of beans on the top.

Rice beans are ready.
Serve with roasted almonds (optional)
The salad with raw Sprouts
Ingredients:
1 carrot
6 cherry tomatoes
1/4 red paprika
10 wild strawberries if you can find them
1/4 cucumber
1 red cabbage leaf
1/4 Asian cooking banana half-ripe
1/4 lime
1/4 tsp salt
1 tsp sugar
3 tsp olive oil
1/2 cup raw bean sprouts
2 tsp powdered cashews.
Chop all vegetables tomatoes can be just cross-cut.
Make dressing and mix with chopped vegetables including beans.
sprinkle cashew powder and the easy salad is done.
that is not cheese it is banana cubes.
garnish with mint leaves

This is a different way of processing sprouts. I'm curious about your salad. The addition of banana is really unusual for me in a salad. But I am very curious about the taste!
I bought it for something to cook. But after 3-4 days it started changing color and became soft. It has a different taste so I tried it in a salad And it worked out very well for together with the salad taste. Thanks for stopping by. :)

this is my favorite food no onion, no garlic, Satvik we called. On some special religious day, we are not allowed to use onion garlic. If you don't get that horse gram you can use brown lentils they are also very good for sprouts. Moong is very common and known sure you using them. :)
