Make steamed pumpkin cake for birthday celebrations.
Hello Vegan, happy birthday to this great community, 2 years old is still a very small age and of course still very cute..hee and for this community's birthday celebration. and actually I have often made this healthy cake for myself. Why do I say it is very healthy because I do not use animal ingredients, oil and sugar. However, I replaced this granulated sugar with brown sugar or palm sugar and this has been going on for the last few months and I am fine without granulated sugar and of course I am starting to get used to not consuming granulated sugar, including in making cakes and various kinds of food and drinks.
I didn't bake this birthday cake, but I steamed it to make it much healthier and in the future I want to get used to using non-guleten flour, even though it is a little more expensive, but it doesn't seem to be a problem if guleten flour is available in large quantities. I made this birthday celebration cake with boiled yellow pumpkin.
To make this cake I will show you the ingredients:
1. ½ part yellow pumpkin weighing 500 grams
2. 200 grams of palm sugar (can be adjusted according to taste)
3. 150 Fresh grated coconut
4. 5 spoons of tapioca flour
5. 10 spoons of rice flour
6. 10 spoons of wheat flour
How to make :
1. Peel the pumpkin then boil until soft, then mash it with a glass, or anything that can make it smooth, (add a little of the pumpkin cooking water so that the cake isn't too hard)
2. After that, add the grated coconut, stir
3. Then add all the flour that has been measured.
4. And finally mix in the palm sugar
5. Keep stirring until all the flour is mixed evenly
6. Then put it in the mold and steam it in a preheated steamer
7. Steam for approximately 20 minutes.
8. Yellow pumpkin cake is ready to eat.
Oh yes, just a tip for friends
- The cake I made is dense according to my taste, if you want it to be much softer, use 1 kilogram of pumpkin and omit the use of tapioca flour
- If you want the cake to be even more delicious, you can add a little more grated coconut, and you can also use this coconut for the cake topping.

Wow! This one looks delicious and yes the ingredients is so healthy. I haven't known about palm sugar. All I can see in the market here is just brown sugar and white sugar.
