Week #3 with my Christmas present. Is the beer the best mate while preparing the ingredients for a tasty pizza?
Satirday is a day for pizza in my family, and I am the pizza chef, as always! All the kids and my wife enjoy a tasty Neapolitan style pizza, cooked on my Ooni pellet portable oven. The preparation of the ingredients is always fun, but this week I decided to step up with the joy when dealing with the tasty Italian cuisine.
I picked the third beer out of my christmas present and it turned out to be a Porter. A Porter, named Dark Season. Yes, the beer is dark, as you can expect out of a ported and yes… it is winter so I can say it is the dark(er) season. It starts to ged dark outside at about 4:30-5:00 PM and by 5:30 it is already night! This is not a problem for a homemade pizza. It is always delicious.
I grabbed the mozzarella. After the dough it is the ingredient that requires the longest time to get ready. I saw this trick somewhere on the internet… When you cut the fresh mozzarella in slices ant let it sit, it dehydrates. This helps it cook quicker, alongside with the tasty dough, which in my case is sourdough!
As I already said, the color is dark! Very dark… Sometimes porters can be a little bit lighter, almost dark brown, but this one is pitch black. I like its outlook. This exact porterhas a bit of lactose inside, which makes the beer body a bit sweeter and thicker. I have to mention here, that I like stronger and a bit sweetened dark beers.
The head stays a lot and it is very thick. Its color is brownish, which was expected. In the mouth the beer has this special dark chocolate flavor and a touch if coffee vibes in the aftertaste. I forgot to mention, that this is a brew of the Bulgarian craft brewery Sofia Electric Brewing. Last of my reviews were of collaboration beers between this brewery an ither European ones, but this one is a pure Bulgarian baby.
So now… time for action… the mozzarella is prepared and the sourdough is ready. Time for pizza!
I am really happy with my pizza oven. It requires only 1,5-2 minutes and the pizza is ready. Also, only 20 minutes are required for the oven to kick at 450 degrees centigrade! This is extremely quick, compared to the regular kitchen oven, that reaches only 250 degrees after more than an hour! We only miss one little touch now in the winter months… The fresh basil… but apart from that, the pizza is quite awesome!

WOW! You and I would get along very nicely with our penchant for beer and making pizza from ingredients at home!
I am more of an IPA addict at this point but it is the malty browns and ambers that rescued me from plain lagers and ales so long ago.
Here's a nice dark and sweet one I enjoyed this week and might be better as dessert with pizza.

Oh, I am very fond of IPAs always, but this was my luck with the porter this time. Homemade pizza is a must at our house!
