Today’s photos feature azahares, the flowers of the coffee plant. These are special because they come from plants I personally planted, and they’ve now produced their first blossoms. Coffee flowers are white, silky, and delicate. They also perfume the surroundings with a sweet aroma reminiscent of several other flowers. The most special thing, of course, is that these flowers will produce coffee beans that will change from green to red in a matter of weeks, ready for roasting and grinding. During flowering, it’s important to be very careful, as they’re extremely delicate and can fall off just by touch. There’s nothing like delicious, hand-prepared coffee—or, as we say in my country, criollo coffee.
