LOH #208 // MY COMFORT MEAL

I hope you all are well?
For this article, i would be writing on my choice of this week's prompt that reads;

"2️⃣ In life, we ​​have good days and not-so-good days, I think that on a not-very-good day, eating something special — a typical dish, a dessert, a delicious snack — manages to raise those spirits, I would love for you to share a recipe for that wonderful dish that makes the joy return and makes your day better."

It should have been beans' porridge, but that's like my favorite meal, and I've talked about it too much in some of my previous posts. Most times(read as not-so-good days), it helps, but not every time. And then I thought it should be golden morn cause I take it every single day without fail. However, it's not necessarily a meal. With just milk, it's all done. Besides, I have it because I'm mostly too lazy to cook anything.

And I thought to myself, what meal takes my mood from a zero(okay, maybe not a zero), but from say, fifty, to up there in a snap.
Then it hit me, the one meal I'd been eating every time I felt blah. And you know what, I want to say that I didn't know it was the one until this prompt, but that would be a lie. I have a sweet tooth, and this one meal usually helps with it, in a healthy way. Plus, I pack and fill mine up with enough proteins to go.

Enough of the talk, that meal is Plantain porridge. Tasty stuff. Highly nutritious. Absolutely mood uplifting.
Let me fake you through the process of how I make mine.

THE INGREDIENTS

▪︎Plantain(I use both ripe and unripe)

▪︎Pumpkin leaves

▪︎Seasoning

▪︎Cow skin
▪︎Fish

▪︎Crayfish

▪︎Palm oil
▪︎Pepper

▪︎Onion

▪︎Salt

COOKING PROCESS

▪︎I start by seasoning my fish and boiling it. The reason I don't add it just as I do other ingredients is so it doesn't break.
▪︎I wash my Plantain and peel off the skin.
▪︎Then, I proceeded to cut them into my desired sizes.
▪︎I put it all in a pot and add enough water to cook it.

▪︎Once it begins to boil(hasn't softened yet), I add in my cow skin, crayfish, seasoning, pepper, some salt, and palm oil.

▪︎I let it cook for a while.
▪︎Then, I stir it until the ingredients are uniformly distributed.
▪︎When it's almost dry of the liquid composition, I add in the pumpkin leaves and stir. I don't even let the liquid dry completely cause I enjoy the creaminess.

▪︎Then I add the already boiled fish and stir gently.
▪︎And yum, it's all ready. It's very tasty, super comforting.
▪︎I serve it hot and enjoy.

It was even only on Monday that I had it.
Now, I'm salivating again.

Having a go-to comfort food is good as it usually shifts our moods from blah to better. I never thought it was plantain porridge until I read the part where you mentioned it. Thank you for sharing your recipe. It looks delicious!
