Torta de piña de la tía Nalvis/Aunt Nalvis' Pineapple Cake [ESP-ENG]
¡Hola chicos! Espero que estén muy bien. Hoy les voy a compartir la receta de la deliciosa torta de piña de mi Tía Navidad, es súper húmeda y jugosa, tiene la cantidad de azúcar perfecta y no empalaga.
Hi guys! I hope you are doing great. Today I'm going to share with you the recipe for my Tia Navidad's delicious pineapple cake, it's super moist and juicy, it has the perfect amount of sugar and it's not cloying.
En estas ocasión hicimos la torta de piña porque es la favorita de mi suegro y estaba de cumpleaños.
This time we made the pineapple cake because it is my father-in-law's favorite and it was his birthday.
Ingredientes:
✓10 g de polvo de hornear.
✓Pizca de sal.
✓920 g harina de trigo leudante.
✓800 g q.
✓500 g de margarina.
✓1,5 kg de piña (+/- 3 piñas).
✓1 cucharada de vainilla.
Caramelo:
✓1 taza de azúcar para el caramelo.
Ingredients:
✓10 g baking powder.
✓ Pinch of salt.
✓920 g leavening wheat flour.
✓800 g sugar.
✓10 eggs.
✓500 g margarine.
✓1.5 kg pineapple (+/- 3 pineapples).
✓1 tablespoon vanilla.
Caramel:
✓1 cup sugar for the caramel.
Procedimiento de elaboración de las ruedas de la piña:
Pelar la piña y picar las ruedas. Darles forma de disco con un cortador circular y cortarles el centro con un cortador más pequeño.
Reservar la cantidad de discos de piña necesarios para cubrir el fondo del molde.
Procedure for the preparation of the pineapple wheels:
Peel the pineapple and chop the wheels. Shape them into discs with a circular cutter and cut out the center with a smaller cutter.
Reserve the amount of pineapple discs needed to cover the bottom of the mold.
Preparar un jugo como el resto de la piña picada en cuadritos, 2 cucharadas de azúcar y 500 ml de agua. Licuar un poco cuidando que el jugo quede con pedacitos de piña.
Cocinar el jugo durante 15 minutos.
Medir 390ml de jugo de piña con tropezones y reservar.
Colar una taza del jugo de piña y reservar.
Prepare a juice with the rest of the diced pineapple, 2 tablespoons of sugar and 500 ml of water. Blend a little bit taking care that the juice remains with pineapple pieces.
Cook the juice for 15 minutes.
Measure 390 ml of pineapple juice with pineapple chunks and reserve.
Strain one cup of the pineapple juice and set aside.
Elaboración del Caramelo:
Colocar la taza de azúcar en el molde donde se horneará la torta y cocinarlo moviendo el molde constantemente hasta que tome color ámbar oscuro, cuidando que no se queme. Al alcanzar el color deseado, bajar del fuego.
Luego mover el molde con la finalidad de cubrir un poco la pared del molde.
Preparation of the caramel:
Place the cup of sugar in the mold where the cake will be baked and cook it moving the mold constantly until it takes on a dark amber color, taking care not to burn. When it reaches the desired color, lower the heat.
Then move the mold in order to cover the mold wall a little.
Dejar enfriar y luego colocar los discos de piña sobre el caramelo de tal forma que cubra todo el fondo del molde.
Allow to cool and then place the pineapple discs on top of the caramel so that it covers the entire bottom of the mold.
Torta:
Colocar la margarina y el azúcar en un envase y mezclar muy bien utilizando preferiblemente una batidora eléctrica hasta formar una crema blanquecina.
Cake:
Place the margarine and sugar in a container and mix very well using preferably an electric mixer until a whitish cream is formed.
Luego agregar los huevos uno a uno, mezclando bien después de agregar cada huevo.
Then add the eggs one by one, mixing well after adding each egg.
Luego mezclar las harina con el polvo de hornear. Agregar la vainilla y la harina utilizando una paleta con movimientos envolventes alternando la harina con los 390 ml de jugo de piña con los tropezones.
Then mix the flour with the baking powder. Add the vanilla and the flour using a paddle with encircling movements, alternating the flour with the 390 ml of pineapple juice with the chunks.
Agregar la taza de jugo de piña al molde y agregar la mezcla de torta.
Hornear a 180°C hasta que al introducir un palito de altura,c éste salga seco (60 minutos aproximadamente).
Add the cup of pineapple juice to the mold and add the cake mixture.
Bake at 180°C (350°F) until it comes out dry (approximately 60 minutes).
Sacar del horno y esperar que enfríe un poco antes de voltear la torta en una bandeja.
Remove from the oven and wait for it to cool slightly before turning the cake out onto a platter.
Por último puedes decorar a tu gusto, es común que sea decorada con cerezas rojas 🍒 pero nosotros lo hicimos con uvas pasas y uvas verdes confitadas.
Finally you can decorate as you like, it is common to decorate it with red cherries 🍒 but we did it with raisins and candied green grapes.

Al final yo hice el biscocho y decoré la torta y mi tía Nalvis se encargó de guiarme en el proceso de cortar las piñas en rodajas y hacer el caramelo.
In the end I made the biscocho and decorated the cake and my aunt Nalvis was in charge of guiding me through the process of slicing the pineapples and making the caramel.
Con la masa que sobró hicimos unos ponquesitos y nos salieron 5. Los probamos y estaban deliciosos.
With the leftover dough we made some ponquesitos and we had 5. We tasted them and they were delicious.
Finalizamos la jornada haciendo entrega al cumpleañero que estaba bien contento, pero no es el más especialista en posar para fotos.
We ended the day by handing it over to the birthday boy, who was very happy, but not the most specialized in posing for photos.
Al cortarla luego de cantar cumpleaños nos dimos cuenta que quedó perfecta. Su sabor, su textura, todo.
When we cut it after the birthday song, we realized that it was perfect. Its flavor, its texture, everything.
