(ENG-ESP) RECIPE: Exquisite eggplant and red pepper antipasto

- Good evening dear friends, I hope you are having a VERY fun weekend! On this occasion, I will explain how to prepare a "delicious antipasto with eggplants and red bell peppers", you can enjoy it as a garnish to accompany countless dishes or when you want a light and healthy dinner option, I usually accompany it with cassava or whole wheat crackers. I hope you enjoy the process of this delicious recipe!
- Buenas noches queridos amigos, espero que estén pasando un fin de semana MUY divertido! En ésta ocasión, les explicaré como preparar un "delicioso antipasto con berenjenas y pimientos rojos", pueden disfrutar como guarnición para acompañar infinidad de platillos o cuando deseen cenar una opción ligera y saludable, suelo acompañar con casabe o galletas integrales. Espero que disfruten el proceso de esta apetitosa receta!

- INGREDIENTS: 2 eggplants, 1 red pepper, 1 bay leaf, 2 cloves of garlic, 4 tablespoons of extra virgin olive oil, 1 tablespoon of white vinegar, 1 teaspoon of brown sugar, pepper, fresh cilantro and salt.
- INGREDIENTES: 2 berenjenas, 1 pimiento rojo, 1 hoja de laurel, 2 dientes de ajo, 4 cucharadas de aceite de oliva extra vírgen, 1 cucharada de vinagre blanco, 1 cucharadita de azúcar morena, pimienta, cilantro fresco y sal.
- We cut the "eggplants" into thin strips, leaving the skin... We spread the bottom of a non-stick frying pan with a touch of sunflower oil, sauté the eggplants stirring occasionally, until we check that they are golden brown and have a soft consistency. I suggest cooking in several steps.
- Cortamos las "berenjenas" en tiras delgadas, dejamos la piel... Untamos el fondo de un sartén antiadherente con un toque de aceite de girasol, salteamos las berenjenas mezclando de forma ocasional, hasta comprobar que se doraron y tomaron una consistencia suave. Les sugiero realizar la cocción en varios pasos.

- We reserve in a deep container, we wait for them to cool to room temperature.
- Reservamos en un envase hondo, esperamos que se enfríen a temperatura ambiente.

- We cut the pepper into julienne strips, extract the seeds and the white part... Sauté for approximately 3 minutes, it is important NOT to let them brown too much, to be able to enjoy their slightly "crunchy" consistency.
- Cortamos el pimiento en julianas, extraemos las semillas y la parte blanca... Sofreímos, aproximadamente durante 3 minutos, es importante NO dejar que se doren mucho, para poder disfrutar de su consistencia ligeramente "crujiente".

- Next, we are going to prepare our succulent vinaigrette that will be the main base to enjoy a VERY tasty and substantial flavor... We add the olive oil to a bowl, season by adding: salt, pepper, vinegar, "crushed" garlic cloves, brown sugar and the bay leaf, mix until well integrated. We let it rest in the refrigerator for 20 minutes.
- A continuación, vamos a preparar nuestra suculenta vinagreta que será la base principal para disfrutar de un sabor MUY sabroso y sustancioso... Incorporamos en un bowl el aceite de oliva, aliñamos agregando: sal, pimienta, vinagre, dientes de ajo "triturados", azúcar morena y la hoja de laurel, mezclamos hasta integrar bien. Dejamos reposar en la nevera durante 20 minutos.

- We mix the eggplant and the pepper... We add the dressing we had reserved, mix with gentle and enveloping movements, cover and let it rest in the refrigerator for 1 hour so that ALL the ingredients are well impregnated with the dressing. When serving, decorate with fresh cilantro.
- Mezclamos la berenjena y el pimiento... Añadimos el aderezo que teníamos reservado, mezclamos con movimientos suaves y envolventes, tapamos y dejamos reposar en la nevera durante 1 hora para que TODOS los ingredientes se impregnen bien con el aderezo. Al momento de servir decoramos con cilantro fresco.
