Coconut Chilli Shell

There are so many foods in this world that I may have never tried, for example rawon, typical of Medan City and many more. But, have you ever tried the famous North Sumatran Shellfish? We as resident of North Sumatra are very proud to have this type of shellfish which is known to be very delicious, in fact some of my friend who are outside the city really miss this type of shellfish.
It is called Tanjung Balai shellfish, because it comes from a city in North Sumatra, to be precise in Tanjung Balai. This city is a swamp and coastal area that is famous for its many sea products that taste delicious, such as anchovies, baby squid and salted fish. There are so many marine products that one source of income for the local residents of Tanjung Balai is fishing. This city is directly bordered by the Strait of Malacca, you know!
Well, actually, to get fresh Tanjung Balai shell, I have to look for them in the morning to get the best ones, because all seafood is really delicious if it's still very fresh, just look at this shell which is still alive and surviving well, the shell looks open and that's it. are the characteristics of shellfish that are still fresh and alive.
I got 2 kg of shellfish from the market, thankfully I got the last stock because Tanjung Balai shellfish are really a favorite for us local residents of the city of Medan. I thought about making my father scallops with coconut sauce because it is one of his favorite foods.
Coconut Sambal Shells are simple to make, but there are several tricks you have to do, for example, when roasting coconut, you have to be patient so that the coconut dries and the aroma comes out.
ingredients:
- 2 Kg Tanjung Balai shellfish
- 100 gr red chilies
- 4 red onions
- 1 clove of garlic
- 100 gr grated coconut
- Salt and sugar for flavoring
- 100 ml cooking oil
- Lemongrass, galangal and a little water.
How to Make Coconut Chili Shell:
- Clean the shellfish, because Tanjung Balai shellfish have a very high sand content, so make sure to clean them repeatedly so they are delicious to eat later. Then boiled with a little water, lemongrass and galangal.
- After boiling, the second stage is removing the shell.
- Put the coconut into the wokpan, over low heat then roast the coconut until dark brown, it takes 15 minutes to do this step, patience is the key so that the coconut is very dry and delicious when eaten.
- Puree the red chilies, garlic and shallots, sauté in oil and add salt and sugar. Try a little to see if the taste suits your taste, then add the coconut and shellfish that have been prepared previously.
- Stir the coconut sauce and shellfish evenly, then serve.
