The Goan fish rice- @qurator top chef Fresh fish
Hello, food lovers and all hivers, friends, and community Greetings.
This recipe is my participation in @qurator Top-Chef fresh fish.
Now I am here in India I have many opportunities to eat my Goan food with real Ingredients with real taste. I tried to make some special food which is not possible to make in Norway. But busy with the garden and property not so much to take photos but when I get time I do try.
This recipe I made last Sunday, We eat non-veg mostly on Sundays.
I made this fish rice it looks similar to paella but not. It is made in different ways using Indian small Mackerels and green gravy. I am very happy to share this recipe with you.
Ingredients:
100 grams of green beans
1 red onion sliced
1 lime
2 green chillies
1 carrot sliced
2 spring onions
1 tomato
400 grams prawns
4 medium size mackerel
I haven't used shells.
2 tbsp oil
1.5 tsp salt
to fry prawns use: 1/4 tsp turmeric, 1/4 tsp chili powder, and coarse rice flour.
1 cup local Indian rice.
1 small branch of spinach
1/4 branch coriander
2 green chillies
2 cm ginger
7-8 garlic cloves
All were cleaned and then steamed.
Made fine green puree in a mixer.
Add 1/2 lime juice to it.
Kept aside a while.
Cleaned fish and prawns, and added 1 tsp salt divided 1/2 tsp in each, and kept aside. (I kept some prawns with tails and swords )
(I don't like to show how I cleaned fish or prawns though I did it at home.)
Started with stirred onion and carrot slices.
In a skillet just adding 1/2 tsp oil. stirred onion rings and carrot slices for 2 minutes.
After 2 minutes removed them and kept aside.
In the same skillet, added 1 tbsp oil.
added green beans, spring onion, and green chilies.
Stirred around 2-3 minutes.
Added washed and soaked rice(soaked just for 10 minutes) and stirred it around 2-3 minutes.
Added green puree made of spinach and coriander.
Stirred until rice coated with green puree.
Sprinkled 3/4 tsp salt.
Poured 2 cups of water in.
Cooked until water is reduced to half.
Dropped a few prawns in the rice mixture.
When rice is cooked at 80% arranged tomato slices, and cooked onion rings. Carrot slices on the top of rice.
Arranged Mackerel and prawns on the top.
Covered and cooked on very low heat to avoid burning.
Meanwhile, I fried some shrimp.
Added chili powder, turmeric, and course rice flour
Mixed and coated the prawns in chili turmeric, and rice flour.
In a warm pan set them using coconut oil 1 tbsp.
sallow-fried them on both sides. making crispy texture out and soft inside

After the rice and fish are cooked sprinkle chopped coriander on top of the dish.
And garnished with fried prawns.
And we enjoyed non0veg Sunday with this dinner.

For fish I am lucky here I have the opportunity to buy different fresh fish at the market or directly on the beach and there in Norway my client always asks me when I have my non-veg day and gives me fresh from the ocean. Both places we live are more fishy. :D my best regards :)
