3-tiered birthday cake to plant power happy third anniversary
Hello, friends, food lovers, and community. First, I want to extend my best wishes to the #plantpower(vegan) community on their 3rd birthday, and I hope for continued growth and prosperity. I apologize for my absence of more than a week, and for not being active on some days, which caused me to miss any notifications or announcements from our dear friend and community admin @sirenahippie.
I noticed about the contest yesterday and have just been active in the kitchen today, making a birthday cake for my favorite community. It's a pleasure to be part of this community with all its kind-hearted members and supporters. I'm glad I found the time to make this cake; it requires time and effort, but it's an expression of love for somebody/ something you like as I do for this community. and we get to eat it as well
Here's a quick and easy way to make this cake if you have all the ingredients on hand. I prepared it from scratch, making vegan peamilk, apple sauce, and frosting decorations, but you can also make it in a simpler way that still tastes great.
Ingredients we need:
Dry ingredients.
2 cups of white flour
1.5 cups of sugar
1 cup of cocoa
2 tsp baking powder
1 tsp baking soda.
1 tsp salt
Wet ingredients
1 cup of soured peamilk.
1 cup apple sauce without sugar
1/2 cup coconut oil
1/2 cup dark strong coffee
2 tbsp vanilla essence.
It is so easy to mix all the dry ingredients one by one in the bowl.
Flour, cocoa, baking powder, baking soda, and salt, Sift it thoroughly.
Add sugar and make a nice mix.
After mixing sugar keep it aside and make the wet ingredients mixture.
First, pour the soured milk into the bowl and add apple sauce, coffee, vanilla, and coconut oil. Mix it well.
We have both mixtures of dry ingredients and wet ingredients.
Gradually pour the wet ingredients into the dry ingredients.
Mix together using the cut-and-fold method, being careful not to overmix.
in the beginning, I placed parchment paper in cake pans and brushed coconut oil on it. They are smaller sizes.
Fill the cake pan. this mixture was more than I thought. so I had to use one more cake pan, I am glad without planning it I am going to make a 3-tiered cake for 3rd anniversary.
They are ready to go in the oven.
Bake them at 180 C preheated oven for around 30/35 minutes.
After 30 minutes check it with a toothpick or bamboo pin, as you know when it comes out clean the cake is done. cool it down and remove from cake pan.
They are nice, moist, and spongy .
The house smells like a cake shop.
At this point, you can eat it like tea/coffee time cake.
But today we are having a special birthday so we need some frosting
For frosting use ingredients;
3/4 cup cashews, washed
2.5 tbsp cocoa powder
3 tbsp powdered sugar
2 tbsp coconut oil.
3 tbsp thick coconut milk.
First grind the cashews and cocoa together until get fine powder from cashew.
add powdered sugar
add coconut oil
then 1 tsp lemon juice
after adding coconut milk the frosting is ready.
can decorate the cake as you wish I did this simply using a dining knife and dessert fork.
Step-by-step make frosting layer to layer.
After chocolate frost cake looks like this.
I used calendula flowers and petals, and sugar pearls to decorate the cake.

What a delight! The cake looks fluffy, soft and moist and with lots of chocolate, for me it is irresistible. And that frosting with cashew nuts must be delicious, the perfect combination and a beautiful cake made with great care and dedication.

Your chocolate cake looks amazing @hindavi, the texture of your sponge looks very good indeed! I've never come across pea milk, do you buy it or make it yourself? I'm sure that and the applesauce must be the secret to getting that beautiful sponge?
